摘  要:作为“食品工程原理”课程的配套实验课程,“食品工程原理实验”不仅可将理论知识与实际应用联系起来,且还能够有效提升学生的实践技能,从而发挥出其最大的价值。传统“食品工程原理实验”教学存在许多弊端,如演示和验证性实验比例过大、知识点繁杂、教学设备不足、学生积极性不高、理论联系实际困难、考核形式单一等,难以满足食品行业发展的需求和一流本科课程建设的要求。针对目前“食品工程原理实验”的教学现状,探讨行之有效的改革措施,旨在提高课程的教学质量和学生的工程实践能力。As a supporting experimental course of Principles of Food Engineering,Principles of Food Engineering Experiments can not only link theoretical knowledge with practical applications,but also effectively enhance students'practical skills,thus giving full play to its maximum value.Traditional experimental teaching of Food Engineering Principles Experiments had many drawbacks,such as too large a proportion of demonstration and validation experiments,complicated knowledge points,insufficient teaching equipment,low motivation of students,difficult to link theory to practice,a single form of assessment and other issues,it was difficult to meet the needs of the development of the food industry and the construction of first-class undergraduate programs,the paper for the current Food Engineering Principles Experimentats,discussed the effective reform measures to improve the teaching quality of the course and the engineering practice ability of the students.
