摘  要:建立一种高效灵敏的富硒大米中甲基-硒代半胱氨酸(SeMeCys)、硒代胱氨酸(SeCys)、硒代蛋氨酸(SeMet)、硒酸盐[Se(Ⅵ)]和亚硒酸盐[Se(Ⅳ)]5种硒形态的检测方法。结果表明,利用酶解法提取和高效液相色谱-电感耦合等离子体质谱联用技术的试验方法分离效率高,线性关系良好,灵敏度高,回收率为91%~105%,大米中SeCys,Se Me Cys,SeMet,Se(Ⅵ)和Se(Ⅳ)的检测限为0.008,0.007,0.009,0.009和0.006 mg/kg。富硒大米中的硒以SeMet有机硒形态为主。A highly efficient and sensitive method for the detection of five selenium species in selenium-enriched rice,including methyl-selenocysteine(SeMeCys),selenocysteine(SeCys),selenomethylmethionine(SeMet),selenate[Se(Ⅵ)],and selenite[Se(Ⅳ)],has been established.The results indicate that the experimental method utilizing enzymatic extraction and high-performance liquid chromatography coupled with inductively coupled plasma mass spectrometry(HPLC-ICP-MS)offers high separation efficiency,good linearity,high sensitivity,and a recovery rate ranging from 91%to 105%.The detection limits for SeCys,SeMeCys,SeMet,Se(Ⅵ),and Se(Ⅳ)in rice are 0.008,0.007,0.009,0.009 and 0.006 mg/kg,respectively.Selenium in selenium-enriched rice is predominantly present in the form of organic selenium as selenomethionine(SeMet).
