金沙江干热河谷不同产地凯特杧果实品质与香气成分差异分析  

Analysis on the difference of fruit quality and aroma composition of Kate mango fruits from different cultivation sites in dry-hot valley of Jinsha River

摘  要:为探究金沙江干热河谷不同产地杧果果实品质与香气成分差异,为不同品种杧果合理种植和综合利用提供参考,以该区域云南省华坪县石龙坝镇、四川攀枝花市仁和镇和金江镇凯特杧为研究对象,测定其品质指标与香气组分,包括维生素C、可溶性蛋白、可溶性糖、可滴定酸、多酚、总黄酮、儿茶素、类胡萝卜素、游离氨基酸和香气成分。结果表明,3个产地凯特杧果实中维生素C、可溶性糖、可滴定酸、多酚、黄酮、类胡萝卜素、游离氨基酸和香气成分含量都存在显著性差异。云南省华坪县石龙坝镇果实可溶性糖、游离氨基酸、多酚、黄酮、叶黄素和β-胡萝卜素含量最高,而四川省攀枝花市金江镇果实含量最低。通过主成分分析发现,品质综合得分由高至低依次为云南省华坪县石龙坝镇、攀枝花市仁和镇、攀枝花市金江镇。In order to explore the difference of fruit quality and aroma composition of mangos in different cultivation sites in dry-hot valley of Jinsha River,and provide a reference for rational planting and comprehensive utilization of different varieties of mango,Kate mango fruits from Shilongba Town,Huaping County,Yunnan Province,Renhe Town and Jinjiang Town,Panzhihua City,Sichuang Province were used as test materials to determine their quality indexes including vitamin C,soluble protein,soluble sugar,titratable acid,polyphenols,total flavonoids,catechins,carotenoids,free amino acids and aroma components.The results showed that the contents of vitamin C,soluble sugar,titratable acid,polyphenols,flavonoids,carotenoids,free amino acids and aroma components were significantly different in the fruits produced in three different plantation sites.The contents of soluble sugar,free amino acid,polyphenols,flavonoids,lutein andβ-carotene were the highest in the fruits produced in Shilongba Town,Huaping County,and the lowest in Jinjiang Town,Panzhihua City.Principal component analysis(PCA)showed that the score of comprehensive quality of the fruits from high to low was as follows:Shilongba Town,Huaping County,Renhe Town Panzhihua City and Jinjiang Town Panzhihua City.
