摘 要:为开发能延缓采后水蜜桃果实软化及保持其较高营养价值的简便、安全的保鲜技术,对采后‘朝霞’水蜜桃果实使用1.2μL/L纸片型1-MCP处理12 h后,在(25±1)℃、相对湿度(RH)85%条件下贮藏,并测定果实硬度及细胞壁代谢相关指标,研究纸片型1-MCP处理对水蜜桃贮藏期间果实硬度和细胞壁代谢的影响及可能的作用机理。结果表明:相较于未经处理(对照)的水蜜桃果实,1.2μL/L纸片型1-MCP处理的水蜜桃果实硬度、果肉细胞壁组分(CWM)以及细胞壁多糖成分(离子结合果胶(ISP)、纤维素、共价结合果胶(CSP)及半纤维素)含量均能保持较高水平,而果肉细胞壁降解酶(多聚半乳糖醛酸酶(PG)、β-半乳糖苷酶(β-Gal)、果胶甲酯酶(PE)和纤维素酶(Cx))活性则相对较低。此外,在贮藏前中期,纸片型1-MCP处理还能抑制水蜜桃果肉水溶性果胶(WSP)含量的上升。综上可知,1.2μL/L纸片型1-MCP能显著抑制细胞壁降解酶的活性,减缓‘朝霞’水蜜桃果实中细胞壁多糖的分解,进一步延缓采后果实软化及品质下降。This study aimed to develop a convenient and safe storage technology that can retard the softening and main-tain the high nutritional values for postharvest peach fruits.The postharvest‘Zhaoxia’peach fruits were treated with 1.2μL/L paper containing 1-MCP for 12 h,and stored at(25±1)℃and 85%relative humidity(RH),then the fruit firmness and cell wall metabolism related indicators were measured,and the effects of paper containing 1-MCP on fruit hardness and cell wall metabolism of peach fruits during storage and the possible mechanisms were investigated.The results showed that compared with untreated peach fruits(control),the hardness,pulp cell wall materials(CWM)and cell wall polysaccharide components(including ionic-soluble pectin(ISP),cellulose,covalent-soluble pectin(CSP)and hemicellulose)of peach fruits treated with 1.2μL/L paper containing 1-MCP maintained higher levels,while the activities of pulp cell wall degrading enzymes including polygalacturonase(PG),β-galactosidase(β-Gal),pec-tinesterase(PE)and cellulase(Cx)were relatively low.In addition,paper containing 1-MCP treatment also inhibited the increase of water-soluble pectin(WSP)contents in peach pulp during the early and middle stages of storage.In conclusion,1.2μL/L paper containing 1-MCP can significantly inhibit the activities of cell wall degrading enzymes,slow down the decomposition of cell wall polysaccharides in‘Zhaoxia’peach fruits,and further delay the incidence of softening and quality deterioration of postharvest fruits.
