摘 要:为优选壶瓶枣裂果多糖咀嚼片最佳配方并提高裂果枣中功能活性物质的利用,以水提醇沉法得到的壶瓶枣裂果多糖和益生菌菌株粉作为主要原料,并加入甜味剂和压片辅助材料,制作一款壶瓶枣裂果多糖咀嚼片。通过单因素和响应面-主成分分析试验优化其配方,并对其理化指标及抗氧化活性进行分析。结果表明,壶瓶枣裂果多糖咀嚼片最优配方为:益生菌菌株粉添加量20%,多糖添加量23%,微晶纤维素添加量17%,木糖醇添加量15%,硬脂酸镁添加量1.5%。其规范化得分为0.914,与预测值0.911相近。4.0 mg/mL的多糖咀嚼片对1,1-二苯基-2-三硝基苯肼(DPPH)自由基清除率为41.11%±0.24%,对羟基自由基清除率为37.29%±0.46%。以最优配方制备的咀嚼片外观整洁、组织紧密、口感及色泽较佳且具有良好的抗氧化活性。研究为裂果枣功能活性物质的深度挖掘及功能食品研发提供参考。To optimize the formulation of Zizyphus jujube pot bottle jujube cracked fruit polysaccharide chewable tab-lets and enhance the utilization of functional active substances in cracked fruit jujubes,a chewable tablet was prepared using hot water-extracted and alcohol-precipitated Zizyphus jujube pot bottle jujube cracked fruit polysaccharides and a probiotic strain powder as the primary ingredients,along with sweeteners and tabletting aids.The formulation was optimized through single-factor and response surface-principal component analysis experiments,and the physico-chemical indexes and antioxidant activity of the tablets were analyzed.The results indicated that the optimal formula for Zizyphus jujube pot bottle jujube cracked fruit polysaccharide chewable tablets was as follows:probiotic strain powder 20%,polysaccharide content 23%,microcrystalline cellulose 17%,xylitol 15%,and magnesium stearate 1.5%.The normalized score was 0.914,which was essentially similar to the predicted value of 0.911.The prepared polysac-charide chewable tablets exhibited a 1,1-diphenyl-2-picrylhydrazyl(DPPH)radical scavenging rate of 41.11%±0.24%and a hydroxyl radical scavenging rate of 37.29%±0.46%at the concentration of 4.0 mg/mL.The tablets prepared with the optimal formulation had a neat appearance,tight texture,good taste and color,and good antioxidant activity.This study provides a reference for the deep mining of functional active substomces and the development of functional foods.
