摘  要:抗性淀粉是一类难以被胃和小肠消化吸收的淀粉,能在盲结肠内被微生物酵解为短链脂肪酸,在机体代谢水平上有益生作用,产生的短链脂肪酸具有降低肠道pH、调节肠道菌群构成、促进肠道内矿物元素的吸收、减少肠道炎症等生理功能。本文仅就抗性淀粉的结构类型、制作工艺及其对肠道健康的影响和在猪生产中的应用作一综述,以期进一步发掘其潜在价值。Resistant starch is a kind of starch that is difficult to be digested and absorbed by the stomach and small intestine.It can be glycolated into short-chain fatty acids by microorganisms in the caecal colon,which has beneficial effects on body metabolism.The produced short-chain fatty acids have physiological functions such as reducing intestinal pH value,regulating intestinal flora composition,promoting the absorption of mineral elements in the intestine,and reducing intestinal inflammation.In this paper,the structure type,production process,effect on intestinal health and application of resistant starch in pig production were reviewed,and its potential value was further explored.
