摘  要:蛋鸽养殖作为新兴产业发展迅速,当前我国年产鸽蛋超7亿只,产值20亿~25亿元,且呈现不断增长的态势。但目前鸽蛋品质及功能研究并未跟上产业发展的步伐,鸽蛋产品加工技术和产品开发尚处于起步阶段。文章系统分析了鸽蛋的物理性质、主要化学组成、特质性成分及表观特征,评价了鸽蛋的健康功能,并阐述其在加工与产业化应用方面的现状,为后期鸽蛋功能性成分研究及鸽蛋产品创制提供理论基础。Egg pigeon breeding as an emerging industry is developing rapidly,the current annual output of pigeon eggs in China exceeds 700 million,with an output value of 2 to 2.5 billion yuan,and also shows a trend of continuous expansion.However,the research on the quality and function of pigeon eggs has not kept up with the pace of industrial development,and the processing technology and product development of pigeon eggs are still in the initial stage.This paper systematically analyzed the physical properties,main chemical compositions,characteristic compositions and appearance features of pigeon eggs,evaluated the health function of pigeon eggs,and expounded its current situation of processing and industrial application,which would provide a theoretical basis for the research of functional ingredients of pigeon eggs and the creation of pigeon eggs products.
