摘  要:利用不同质量分数的乙醇以及水作为溶剂,系统比较了不同溶剂提取物中多酚的质量分数及其对DPPH和ABTS自由基的清除能力。结果表明,80%乙醇提取物中多酚质量分数最高(9.28 mg/g),其抗氧化活性在所有溶剂中表现最佳,DPPH清除率高达96.23%,ABTS清除率达95.28%,表明多酚质量分数与抗氧化能力之间存在强正相关。此外,探讨了光照、温度、pH和特定化学物质对多酚稳定性的影响,结果发现高温和强光照显著降低多酚稳定性,而适宜的酸性环境可显著提高其稳定性。同时优化了积雪草多酚的提取条件,为其在医药和化妆品行业中的应用提供了新的科学依据。The mass fractions of polyphenols in the extracts from Centella asiatica by different solvents that contain ethanol and water with varying mass fractions from 20%to 95%,and their scavenging abilities against DPPH and ABTS free radicals are systematically compared.Results show that the extract by 80%ethanol has the highest polyphenol mass fraction(9.28 mg·g-1),and the best antioxidant activity.The clearance rates of DPPH and ABTS by it are as high as 96.23%and 95.28%,respectively,which also indicates there is a strong positive correlation between polyphenols content and antioxidant capacity.In addition,the impacts of illumination,temperature,pH and specific chemicals on the stability of polyphenols are explored.It is found that high temperature and strong illumination can significantly reduce the stability of polyphenols,while a suitable acidic environment can significantly improve its stability.The conditions for the extraction of polyphenols from Centella asiatica are optimized,providing new scientific basis for the application of Centella asiatica polyphenols in the pharmaceutical and cosmetics industries.
