摘 要:本试验旨在研究低蛋白质饲粮中添加发酵棉籽粕和发酵干酒糟及其可溶物(DDGS)替代豆粕对育肥猪生长性能、抗氧化功能和肉品质的影响。采用单因素随机区组设计,选取64头体重[(59.45±2.00)kg]相近的健康“杜长大”三元杂交猪,随机分为4个组,每组8个重复,每个重复2头猪(公母各1头)。正对照组饲喂常规玉米-豆粕型基础饲粮,其粗蛋白质水平为13.50%;负对照组饲喂低蛋白质补充合成氨基酸的玉米-豆粕型饲粮,其粗蛋白质水平降低为11.55%;试验Ⅰ和试验Ⅱ组分别饲喂以发酵棉籽粕或发酵DDGS部分替代负对照组饲粮中豆粕的饲粮,同时补充合成氨基酸,2组饲粮粗蛋白质水平均为11.56%。试验猪体重达到110 kg时结束试验,并进行屠宰取样以及后续指标测定。结果表明:1)与未发酵棉籽粕相比,发酵棉籽粕粗蛋白质和粗灰分含量有所提高,游离棉酚含量大幅度降低;与未发酵DDGS相比,发酵DDGS粗蛋白质含量明显提高,同时粗纤维含量有所降低。2)各组间育肥猪生长性能、胴体重、屠宰率和眼肌面积均无显著差异(P>0.05);与正对照组相比,负对照组、试验Ⅰ组和试验Ⅱ组平均背膘厚度显著提高(P<0.05)。3)各组间育肥猪血清总抗氧化能力(T-AOC)、超氧化物歧化酶(SOD)和过氧化氢酶(CAT)活性以及丙二醛(MDA)含量均无显著差异(P>0.05);与其他3组相比,试验Ⅰ组血清谷胱甘肽过氧化物酶(GSH-Px)活性显著降低(P<0.05)。各组间育肥猪背最长肌SOD和GSH-Px活性均无显著差异(P>0.05);与其他3组相比,试验Ⅱ组背最长肌T-AOC显著降低(P<0.05)。4)各组间育肥猪背最长肌肉色、滴水损失、pH、剪切力和大理石纹评分均无显著差异(P>0.05)。与正对照组比,负对照组背最长肌肌内脂肪含量显著提高(P<0.05),负对照组、试验Ⅰ组和试验Ⅱ组背最长肌肌苷酸含量显著提高(P<0.05),试验Ⅰ组和试验Ⅱ组背最长肌二十烷二烯酸比例This experiment was conducted to investigate the effects of supplementation of fermented cottonseed meal and fermented dried distiller’s grains with solubles(DDGS)instead of soybean meal in low-protein diets on growth performance,antioxidant function and meat quality of finishing pigs.Using a single-factor random block design,64 healthy“Duroc×Landrace×Yorkshire”three-way hybrid pigs with similar body weight of(59.45±2.00)kg were randomly divided into 4 groups with 8 replicates per group and 2 pigs per replicate(1 male and 1 female).Pigs in the positive control group were fed a common corn-soybean meal type basal diet with 13.50% crude protein;those in the negative control group were fed a low-protein corn-soybean meal type diet with synthetic amino acid supplementation,and the crude protein level was reduced to 11.55%;and those in experimental groups Ⅰ and Ⅱ were fed the low-protein diet supplemented with fermented cottonseed meal and fermented DDGS partially replacing the soybean meal in the negative control group,and supplemented with synthetic amino acids,respectively,and the crude protein level in the diets of the two groups was 11.56%.The experiment ended when the pig weight reached 110 kg,and slaughter sampling and subsequent index determination were carried out.The results showed as follows:1)compared with unfermented cottonseed meal,the contents of crude protein and crude ash in fermented cottonseed meal were increased,and the free gossypol content was significantly decreased;compared with unfermented DDGS,the crude protein content in fermented DDGS was significantly increased,while the crude fiber content was decreased.2)There were no significant differences in growth performance,carcass weight,dressing percentage and loin eye muscle area of finishing pigs among all groups(P>0.05);compared with the positive control group,the average backfat thickness in the negative control group,experimental groups Ⅰ and Ⅱ was significantly increased(P<0.05).3)There were no significant differences in to
