摘  要:试验旨在探究发酵中草药对淮南黄肉鸡生长性能、屠宰性能、肌肉品质和免疫机能的影响。试验选取22日龄淮南黄肉鸡180只,随机分为6组,每组3个重复,每个重复10只。对照组饲喂基础饲粮,A组、B组、C组、D组、E组在基础饲粮的基础上分别添加0.05%、0.10%、0.20%、0.40%的发酵中草药,以及0.20%的非发酵中草药。试验期42 d。结果显示,B~D组末重和增重显著高于对照组(P<0.05),平均日增重显著高于对照组、A组和E组(P<0.05),D组料重比显著低于对照组(P<0.05)。C组屠宰率显著高于对照组、A组及E组(P<0.05),D组腿肌率显著高于对照组(P<0.05);A~D组胸肌亮度(L^(*))值显著低于对照组(P<0.05),黄度(b^(*))值显著低于对照组和E组(P<0.05)。A~C组腿肌L^(*)值显著低于对照组、D组和E组(P<0.05),A~E组腿肌红度(a^(*))值显著高于对照组(P<0.05)。B组、C组胸肌pH值显著高于对照组和A组(P<0.05),腿肌pH值显著高于对照组(P<0.05)。B~D组胸肌滴水损失显著低于对照组(P<0.05),D组腿肌滴水损失显著低于对照组、A组、B组及E组(P<0.05);D组胸腺指数显著高于其他组(P<0.05)。研究表明,发酵中草药能够提升淮南黄肉鸡的生长性能、屠宰性能、肉品质和免疫机能,0.40%发酵中草药效果较好。This study aimed to investigate the effects of fermented Chinese herbal medicine on the growth performance,slaughter performance,meat quality,and immune function of Huainan Yellow broilers.A total of 180 Huainan Yellow broilers at 22 days of age were randomly divided into six groups,with three replicates per group and 10 broilers per replicate.The control group was fed a basal diet,while groups A,B,C,D,and E were fed the basal diet supplemented with 0.05%,0.10%,0.20%,0.40%of fermented Chinese herbal medicine,and 0.20%of non-fermented Chinese herbal medicine,respectively.The experimental period lasted for 42 days.The results showed that the final weight and weight gain of groups B to D were significantly higher than those of the control group(P<0.05),and the average daily weight gain was significantly higher than that of the control group,group A,and group E(P<0.05).The feed-to-weight ratio of group D was significantly lower than that of the control group(P<0.05).The slaughter rate of group C was significantly higher than that of the control group,group A,and group E(P<0.05),and the leg muscle rate of group D was significantly higher than that of the control group(P<0.05).The luminance(L^(*))values of the breast muscle in groups A to D was significantly lower than those of the control group(P<0.05),and the yellow(b^(*))values was significantly lower than those of the control group and group E(P<0.05).The L^(*)values of the leg muscle in groups A to C was significantly lower than those of the control group,group D,and group E(P<0.05),while the red(a^(*))values in groups A to E of the leg muscle was significantly higher than that in control group(P<0.05).The pH values of the breast muscle in groups B and C was significantly higher than those of the control group and group A(P<0.05),and the pH values of the leg muscle was significantly higher than those of the control group(P<0.05).The drip loss of the breast muscle in groups B to D was significantly lower than that of the control group(P<0.05),and the drip loss of t
