摘 要:人工智能的发展推动着智慧餐饮的发展,烹饪人才培养应及时调整,以适应社会发展需求。通过对烹饪人才培养模式改革创新现状以及国内外高校多学科融合教学进行梳理和分析,结合学校定位,提出了协同创新和多学科融合的烹饪人才培养模式,建立“1+4+1”协同创新实践教学平台。从构建多学科融合的课程体系、建立多学科融合的创新实践训练体系、优化教学内容、改革创新教学方法等多方面进行探索,以期培养出能够立足人工智能时代的餐饮业“有温度”的创新型人才。The development of artificial intelligence(AI)promotes the development of smart catering,culinary talent training should be adjusted in time to meet the needs of social development.This paper combs and analyzes the current situation of reform and innovation of culinary talent training mode and multidisciplinary mixed teaching in colleges and universities at home and abroad,and proposes a collaborative innovation and multidisciplinary mixed culinary talent training mode combined with the positioning of the school,and establishes a“1+4+1”collaborative innovation practice teaching platform.From the construction of multidisciplinary integration of the curriculum system,the establishment of multidisciplinary integration of innovative practical training system,optimization of teaching content,reform and innovation of teaching methods,“warm”and innovative talents in the catering industry who can stand firm in the era of AI are cultivated.
