摘  要:食品分析是食品科学与工程类专业的核心课程之一。针对食品分析教学过程中存在学生自主创新能力不强、学生个性化学习未得到重视和师生之间沟通不足等问题,本文探讨了食品分析慕课(MOOC)-翻转课堂线上线下混合式教学的课前、课堂和课后教学设计,提出慕课、翻转课堂、理实一体化教学和综合考核方式等教学改革措施,培养学生分析问题和解决问题的能力,为推进食品分析课程教学改革提供有益参考与借鉴。Food analysis is one of the key courses in food science and engineering in major.Aiming at the teaching process of food analysis,there are problems such as students'independent innovation ability is not strong,students'personalized learning is not paid attention to and communication between teachers and students is insufficient,this paper discusses the pre-course,classroom and post-course teaching design of the online-offline mixed teaching of MOOC-flipping classroom for food analysis,and puts forward the teaching reform measures such as MOOC,flipping classroom,integrated teaching of theory and practice and integrated assessment methods,which can develop students'problem-analyzing and problem-solving ability,and provide useful reference for promoting the teaching reform of food analysis course.
