摘  要:通过分析有关细胞培养肉的文献数据,探讨该领域的研究热点和未来发展趋势。利用Citespace、Vosviewer等软件,对Web of Science数据库中2000—2023年的774篇文献进行深入分析,这些文献主要围绕cell based meat,culture meat,clean meat和in vitro meat等关键词。通过分析年度论文发表量、研究人员的合作模式,以及国家、机构和关键词的分布特点,采用共现、聚类和突现等分析方法,生成关键词的可视化图谱,从而展现细胞培养肉领域的研究现状及其发展趋势。结果显示,细胞培养肉领域正在迅速发展,美国在该领域的发文量位居全球首位。其中,Post M.J和Kaplan D.L.教授所带领的团队具有较高的文献产出率。此外,不同地区的作者、机构和国家之间的合作日益紧密,形成以美国、中国、英国、韩国、荷兰等国家为中心的学术交流网络。同时,尚未形成稳定的核心作者群体。研究热点正从传统方向转向新兴领域,perceived naturalness(感知自然性),regulatory challenges(监管挑战)和alternative protein(可替代蛋白质)等已成为突现关键词,表明该研究领域正在向多学科交叉融合的方向发展,提示细胞培养肉研究正处于一个活跃且不断发展的阶段,具有广阔的研究前景。研究结果可为从事细胞培养肉研究的学者提供宝贵的数据参考。The research hotspots and future development trends in cell culture meat are analyzed.Use Citespace,Vosviewerand other statistical analysis tools to conduct an in-depth analysis of 774 articles from 2000 to 2023 in the Web of Sciencedatabase.These articles mainly focuse on cell based meat,culture meat,clean meat,in vitro meat and other keywords.Byanalyzing the annual number of papers published,the cooperation mode of researchers,and the distribution characteristics ofcountries,institutions and keywords,co-occurrence,clustering and burst analysis methods are used to generate a visual mapof keywords,so as to show the research status and development trend of cell culture meat.The results show that the field ofcell culture meat is developing rapidly,and the United States rank first in the world in this field.Among them,the team led byPostM.J,Kaplan D.L.,and DavidL.has a high literature output rate.In addition,the cooperation between authors,institutionsand countries in different regions has become increasingly close,forming an academic exchange network centered on theUnited States,China,the United Kingdom,the republic of Korea,the Netherlands and other countries.At the same time,astable core author group has not yet been formed.The focus of research is shifting from the traditional direction to the newfield.Perceived naturalness,regulatory challenges,and alternative proteins have become emerging keywords,indicating thatthe research field is developing in the direction of multidisciplinary integration.In summary,the study of cell culture meat is inan active and developing stage,and has broad research prospects.The researchwillprovide valuable data reference for scholarsengaged in cell culture meat research.
