摘 要:黄曲霉毒素B_(1)是由黄曲霉和寄生曲霉产毒菌株产生的一类毒性极强的次级代谢产物,广泛存在于农产品播种、生长、采收以及储藏的各个环节,不仅给食品安全带来巨大隐患,而且其高度致癌性也影响着人类健康。近年来全球范围内黄曲霉毒素阳性检出率居高不下,探寻一种安全高效降低霉菌毒素污染水平的技术尤为重要。因此,本文通过归纳分析黄曲霉毒素B_(1)的新型降解方法,并比较其在粮油行业实际应用情况的优缺点,从而为黄曲霉毒素降解技术选用提供参考。Aflatoxin B_(1) is a kind of highly toxic secondary metabolites produced by Aspergillus flavus and Aspergillus parasiticus strains.It widely exists in all aspects of sowing,growth,harvest and storage of agricultural products,and brings great hidden danger to food safety.And its high carcinogenicity also affects human health.In recent years,the positive rate of aflatoxin B_(1) is high all over the world,therefore,it is of extreme importance to explore a safe and efficient technology to reduce the pollution level of mycotoxin.Hence,in this paper,the new degradation methods of aflatoxin B_(1) were summarized and analyzed,and the advantages and disadvantages of its practical application in grain and oil industry were compared,so as to provide reference for the selection of aflatoxin degradation technology.
