摘  要:橄榄油因其营养价值、销售价格较其他油脂要高,受利益驱使出现的橄榄油掺假现象损害消费者的合法权益,不利于油脂行业的健康发展。本文综述了橄榄油鉴伪的现有检测方法,重点阐述了无损快速检测方法、基于特征指标的检测方法、基于各种组学技术的检测方法的优缺点及其应用现状,旨在为效率更高、适用性更强及精准度更高的橄榄油鉴伪检测方法的开发提供参考。同时,本文展望了今后的发展趋势,通过脂质组学方法对橄榄油的主要成分-甘油酯进行分析,结合化学计量学方法分析橄榄油中的特征甘油酯成分;通过风味组学方法对橄榄油中的微量特征成分-挥发性气味物质进行分析,结合化学计量学方法筛选得到特征挥发性成分标志化合物,建立橄榄油的特征身份指纹图谱库,以此对其真伪进行鉴别。Olive oil,due to its higher nutritional value and sales price compared to other oils,is subject to profit driven adulteration,which damages the legitimate rights and interests of consumers and is not conducive to the healthy development of the oil industry.In this article,the existing detection methods for olive oil counterfeiting were reviewed,the advantages,disadvantages,and application status of non-destructive rapid detection methods,chromatographic detection methods based on characteristic indicators,and detection methods based on various omics technologies were focused on,so as to provide reference for the development of more efficient,applicable,and precise olive oil counterfeiting detection methods.At the same time,in this article,future development trends were looked forward to,the main component of olive oil-glycerides through lipidomics methods was analyzed,and chemometric methods were combined to analyze the characteristic glyceride components in olive oil;flavor omics methods were used to analyze trace characteristic components-volatile odor compounds in olive oil,chemometrics methods were combined to screen for characteristic volatile component marker compounds,and a characteristic identity fingerprint library of olive oil was established to distinguish its authenticity.
