基于我校食品分析大赛的市售奶茶中咖啡因含量检测方法探究

摘  要:基于我校食品分析大赛的创新性实验选题,结合高等师范院校本科化学专业多门实验课程中与食品中咖啡因相关的实验教学,采用本科教学的常见分析方法紫外分光光度法(UV)及高效液相色谱法(HPLC)分别测定了市售奶茶样品中的咖啡因含量,并应用于化学专业公费师范生的实验教学中。结果表明,紫外分光光度法测得的市售奶茶样品中的咖啡因含量高于高效液相色谱法所得结果,转换系数HPLC/UV为0.495±0.109。该实验运用了多种分析仪器,所测样品贴近日常生活,实验教学效果好,且能激发学生兴趣,培养学生的科研与创新思维,为培养优质师范生提供了有力支持。This study derives from the innovative experimental topic selection of the Food Analysis Competition at Beijing Normal University at Zhuhai,combined with the experimental teaching related to caffeine in food in multiple undergraduate experimental courses of the chemistry major at higher normal universities.In this study,ultraviolet spectrophotometry(UV)and high-performance liquid chromatography(HPLC),common analytical methods for undergraduate teaching,were used to determine the caffeine content in bubble tea samples.Then the study was used in undergraduate experimental teaching for public-funded normal school students majoring in chemistry.The caffeine content in bubble tea samples measured by UV was shown to be higher than that obtained by HPLC,and the conversion coefficient HPLC/UV was calculated to be 0.495±0.109.This study uses a variety of analytical instruments,has a good experimental teaching effect,and the samples tested are close to daily life.This study can also stimulate students'interest,cultivate students'scientific research and innovative thinking,and provide strong support for cultivating high-quality normal students.
