摘　　要：四川省饮食类非物质文化遗产种类繁多,大体可以划分为传统川菜、川味小吃、藏羌彝饮食、宗教素食、川茶演艺、川蜀名酒饮食等六大类饮食;以文化遗产保护为基础,以市场运作为手段,以品牌塑造为方向,以文化创新为动力,以非遗美食、节庆活动为载体,是推动四川省非物质文化遗产保护传承的内在要求;根据四川饮食类非物质文化遗产资源禀赋以及市场发展需要,可以将其发展模式归纳为传统川菜馆发展模式、市井小吃休闲文化发展模式、民族饮食旅游文化发展模式、宗教素食体验文化发展模式、川茶演艺饮食文化发展模式、川酒品牌文化发展模式等六大类型;以优秀传统文化创造性转化与创新性发展为动力,推动四川省饮食类非物质文化遗产的传承、创新与发展,是实现其可持续发展目标的必由之路。There are many kinds of food intangible cultural heritage in Sichuan Province,which can be roughly divided into six categories:traditional Sichuan cuisine,Sichuan snacks,Tibetan,Qiang and Yi diet,religious vegetarian diet,Sichuan tea performing arts,Sichuan and Sichuan famous wine diet,etc.Taking cultural heritage protection as the foundation,market operation as the means,brand building as the direction,cultural innovation as the driving force and intangible food and festival activities as the carrier are the inherent requirements to promote the protection and inheritance of intangible cultural heritage in Sichuan Province.According to the resource endowment of Sichuan catering intangible cultural heritage and the needs of market development,its development models can be summarized into six types:traditional Sichuan restaurant development model,street snack leisure culture development model,national catering tourism culture development model,religious vegetarian experience culture development model,Sichuan tea performing arts catering culture development model and Sichuan wine brand culture development model.Driven by the creative transformation and innovative development of excellent traditional culture,promoting the inheritance,innovation and development of Sichuan's catering intangible cultural heritage is the only way to achieve its sustainable development goal.
