摘  要:在我国果蔬产业规模化、集约化发展的背景下,果蔬加工副产物急剧增加,这些副产物富含膳食纤维、油脂、色素、功能性物质等多种营养成分,具备极高的潜在利用价值。本文系统梳理了果蔬加工副产物的综合利用现状,阐述了果蔬加工副产物的综合利用方式,包括直接加工成果蔬干、果脯等产品,提取有效成分用于食品、医药、化妆品等领域,以及通过生物质转化生产果醋、果胶酶、燃料、饲料、肥料等。同时,提出我国在该领域存在技术研发和装备创新不足、标准化管理水平低、资金投入不够等问题。基于以上问题,本文提出了加大技术研发与装备创新力度,提升标准化管理水平,构建多元化投入体系等建议,从而推动果蔬加工副产物综合利用产业的发展,实现资源可持续利用与产业绿色发展。Under the background of the large-scale and intensive development of China’s fruit and vegetable industry,the output of fruit and vegetable processing by-products has increased sharply,which are rich in various nutrients such as dietary fiber,oils,pigments,and functional substances,and have extremely high potential utilization value.This article systematically analyzed the current situation of the comprehensive utilization of fruit and vegetable processing by-products,and elaborated the ways of comprehensive utilization,including directly processing them into products such as dried fruits and vegetables and preserved fruits,extracting active ingredients for use in the fields of food,medicine,cosmetics,etc.,and producing fruit vinegar,pectinase,fuels,feeds,fertilizers,etc.At the same time,it was pointed out that there we problems in this field in China,such as insufficient technological research and development and equipment innovation,low level of standardized management,and insufficient capital investment.Based on the above problems,this article put forward development suggestions such as increasing the intensity of technological research and development and equipment innovation,improving the level of standardized management,and constructing a diversified investment system,so as to promote the development of the comprehensive utilization industry of fruit and vegetable processing by-products and achieve the sustainable utilization of resources and the green development of the industry.
