摘　　要：ω-3多不饱和脂肪酸(omega-3 polyunsaturated fatty acids,ω-3 PUFAs)是动物和人体的必需营养素,具有维持机体平衡,预防多种慢性和代谢性疾病的功能.然而,我国居民目前存在ω-3 PUFAs结构性缺乏的情况.随着人们对健康饮食的关注度不断提高,增加摄入ω-3 PUFAs成为一个重要的营养目标.畜产品是人类膳食中重要的组成部分,许多研究证实,在饲料中添加富含ω-3 PUFAs的原料可以显著增加畜产品中ω-3 PUFAs的含量.因此,畜产品有望成为ω-3 PUFAs营养强化的载体,为增加ω-3 PUFAs摄入量提供一种有效途径.本文综述了ω-3 PUFAs的膳食营养参考摄入量及我国居民摄入现状,不同膳食中ω-3 PUFAs的含量,畜禽饲料中ω-3 PUFAs资源状况以及畜产品ω-3 PUFAs生物营养强化的研究现状,为进一步研究和开发畜产品的生物营养强化提供实践指导和科学依据.Omega-3 polyunsaturated fatty acids(ω-3 PUFAs)are essential nutrients for both animals and humans,playing a crucial role in maintaining bodily balance and preventing various chronic and metabolic diseases.However,there is currently a structural deficiency ofω-3 PUFAs among the Chinese residents.With the increasing attention to healthy diet,increasing the intake ofω-3 PUFAs has become an important nutritional goal.Livestock products are significant components of the human diet,and numerous studies have confirmed that addingω-3 PUFAs-rich ingredients to animal feed can significantly increase the content ofω-3 PUFAs in poultry products.Therefore,livestock products are expected to serve as carriers for the nutritional fortification ofω-3 PUFAs,providing an effective means to enhance the intake ofω-3 PUFAs.This article reviews the recommended dietary intake ofω-3 PUFAs and the current intake status among the Chinese residents,as well as the levels ofω-3 PUFAs in different diets,the availability ofω-3 PUFAs resources in livestock and poultry feed,and the research status of biofortification ofω-3 PUFAs in livestock products,so as to provide practical guidance and scientific basis for further research and development of biofortification in livestock products.
