响应面法优化稠李果色素提取工艺

摘  要:本文以稠李果为原料,采用超声辅助醇提取法来提取稠李果中色素。通过单因素试验,研究提取温度、乙醇体积分数、超声时间、提取溶液pH值以及料液比对色素提取率的影响。采用响应面法对色素提取条件进行优化,并结合实际情况调整,结果显示提取工艺条件调整为提取温度50℃、乙醇体积分数60%、料液比1∶10(g∶mL),提取时间30 min。在此条件下,稠李果提取液中色素吸光度为0.615,折合稠李果色素含量为5.54 mg·g^(-1)。In this paper,Prunus padus fruit was used as the raw material,and the pigment in Prunus padus fruit was extracted by ultrasonic-assisted alcohol extraction method.Through single-factor experiments,the effects of extraction temperature,ethanol volume fraction,ultrasonic time,pH value of the extraction solution,and solid-liquid ratio on the pigment extraction rate were studied.The response surface methodology was adopted to optimize the pigment extraction conditions,and adjustments were made considering the actual situation.As a result,the extraction process conditions were adjusted to an extraction temperature of 50℃,an ethanol volume fraction of 60%,a solidliquid ratio of 1∶10(g∶mL),and an extraction time of 30 minutes.Under these conditions,the absorbance of the pigment in the Prunus padus fruit extract was 0.615,and the equivalent Prunus padus fruit pigment content was 5.54 mg·g^(-1).
