摘 要:研究采集了我国27个产地21个品种的39份成熟期田间水稻样品,采用高效液相色谱-串联质谱方法对稻杆、稻壳、糙米中的香兰素的含量分布进行了测定,并分析了品种和产地的可能影响。结果表明,在采集的39个稻杆、稻壳、糙米样品中均检出香兰素,含量分别为3.76~21.00、0.58~13.20、0.03~0.22 mg/kg。稻杆和稻壳中香兰素的含量远高于糙米。对于同一品种,湖北产区“丰两优”糙米中香兰素含量显著高于安徽、湖南和江西。通过对不同时长碾磨加工的米粉进行分析,发现香兰素主要分布于糙米外层。基于我国成熟期水稻香兰素的含量及分布,推测大米中的香兰素可能为内源产生。In this study,39 mature rice samples of 21 varieties from 27 origins were collected,and vanillin in rice straw,rice husk and brown rice was determined by high performance liquid chromatography-tandem mass spectrometry,and the possible effects of varieties and origins were analyzed.The results indicated that vanillin was detected in all 39 collected rice straws,husks,and brown rice at concentrations ranging from 3.76-21.00 mg/kg,0.58-13.20 mg/kg,and 0.03-0.22 mg/kg,respectively.Concentrations of vanillin in rice straw and husk were significantly higher than in brown rice.Notably,for the same variety,the concentration of vanillin in brown rice of the variety“Feng Liang You”in Hubei Province was significantly higher than that in Anhui,Hunan and Jiangxi.It was found that vanillin in brown rice was mainly distributed in the outer layer through analyzing rice flours processed by different lengths of milling.Based on the concentration level and distribution of vanillin in rice at the ripening stage in the country,it was hypothesized that vanillin in rice may be produced endogenously.
