摘 要:为寻找适合云南冰糖橙的采后处理方式,以达到降低水分散失、维持果实品质的目的,以云南冰糖橙为试验材料,研究不同采后处理方式对短期贮藏过程中果实外观、失重率、总可溶性固形物含量、可滴定酸含量、呼吸强度及异味物质含量变化的影响。结果表明,与清水处理(对照组)及使用891SS涂膜剂和2,4-滴钠盐进行保鲜的商业处理方式相比,采用蜂蜡-小烛树蜡基涂膜剂和氯氟吡氧乙酸异辛酯进行保鲜的优化处理在维持果实外观和内在品质、降低果实失重率及呼吸强度方面效果更佳。尽管优化处理下果实的乙醇含量较对照有所升高,但与现有的商业处理相比,显著降低了乙醇的积累。常温贮藏21 d时,优化处理果实的乙醇含量为3451.10 mg/L,显著低于商业处理(6265.40 mg/L)。研究结果可为云南冰糖橙采后处理提供一定的技术指导和理论参考。This study aimed to find a postharvest treatment suitable for Citrus sinensis in Yunnan to reduce water loss and maintain fruit qualities.The Yunnan Citrus sinensis fruits were used as experimental materials,and the changes of fruits appearance,weight loss rates,total soluble solid and titrable acid contents,respiratory intensity and odor con⁃tents during short-term storage under different postharvest treatments were investigated.The results showed that com⁃pared with control group,treated with water and commercial group treated with 891SS coating and 2,4-D,the optimal treatment with beeswax-candelilla wax based coating and isooctyl chlorofluropyloxyacetate was more effective in main⁃taining fruits appearance and internal qualities,and reducing the weight loss rates and respiratory intensity.The etha⁃nol contents in fruits under optimized treatment were increased compared with control group,while significantly reduced compared with existing commercial treatment.Under normal temperature storage for 21 days,the ethanol con⁃tent of fruits under optimized treatment was 3451.10 mg/L,which was significantly lower than that of commercial treatment(6265.40 mg/L).The research results can provide some technical guidance and theoretical references for post-harvest treatments of Citrus sinensis in Yunnan province.
