摘  要:食品质量与安全课程作为食品类专业的核心课程,对培养食品行业高素质应用型人才具有重要作用。本文通过分析食品质量与安全课程教学过程中存在的问题,并根据课程特点、教学目标以及教学内容,提出以OBE理念为指导的反向设计改革措施。拓展教学资源,丰富教学内容,改革教学方式,创新课程考核模式。实践表明,基于OBE理念的智慧教学改革可以调动学生学习主动性、实践性和创新性,增强课堂教学效果,也为培养食品质量控制及食品安全分析领域的应用型人才提供保证。Food quality and safety,as the fundamental course for food majors,plays a pivotal role in fostering practical talents with exceptional qualities for the food industry.This paper proposes reform measures,guided by the Outcome-Based Education(OBE)concept,to address the issues identified in the teaching process of thefood quality and safety course.These measures are developed through by reverse designing,taking into account the characteristics,teaching objectives and content of the course.Expand teaching resources,enrich teaching content,reform teaching methods,and innovate course assessment models.The practice demonstrated that the intelligent pedagogical reform of the food quality and safety course,based on OBE concept,effectively stimulates students'intrinsic motivation for learning,practicality and innovation,and enhancing overall teaching efficiency.Meanwhile,the reform can also facilitate the preparation for cultivating and developing talent resources in the field of food quality control and food safety analysis in future endeavors.
