摘 要:霉菌毒素污染已成为饲料和食品安全的最大隐患之一,严重威胁着动物和人类健康。了解霉菌毒素诱发毒性的机制是解毒的关键。铁死亡(ferroptosis)是一种以铁过载、脂质活性氧(ROS)积累和谷胱甘肽(GSH)消耗为特征的细胞死亡方式。越来越多的研究表明,铁死亡参与了霉菌毒素暴露引起的器官损伤,而天然抗氧化剂、铁死亡抑制剂以及添加剂可以有效抑制铁死亡,从而减轻霉菌毒素的毒性作用。该综述通过概括铁死亡在霉菌毒素毒性中的作用及机制,以及比较分析靶向铁死亡拮抗霉菌毒素毒性的保护剂及其机制,可为今后防治霉菌毒素毒性提供新策略。Mycotoxin contamination has become one of the greatest hidden dangers to feed and food safety,posing a serious threat to animal and human health.Understanding the mechanisms of mycotoxin-induced toxicity is the key to detoxification.Ferroptosis is a mode of cell death characterised by iron overload,lipid reactive oxygen species(ROS)accumulation and glutathione(GSH)depletion.A growing body of research suggests that ferroptosis is involved in organ damage induced by mycotoxin exposure,and that natural antioxidants,ferroptosis inhibitors,and additives can effectively inhibit ferroptosis and thus mitigate the toxic effects of mycotoxins.By summarising the role and mechanism of ferroptosis in mycotoxin toxicity,and by comparatively analysing protective agents targeting ferroptosis to antagonise mycotoxin toxicity and their mechanisms,this review may provide new strategies for the prevention and control of mycotoxin toxicity in the future.
