摘 要:为了综合评价小茴香品质,选择产地为甘肃省定西市、广西壮族自治区钦州市、陕西省榆林市的3种小茴香作为研究对象,测定3种小茴香的燃烧热,燃烧稳定性,脂肪、粗纤维、灰分、微量元素、氨基酸质量分数。实验结果表明:3种小茴香燃烧热大小排列顺序为甘肃省定西市>陕西省榆林市>广西壮族自治区钦州市;燃烧稳定性排列顺序为陕西省榆林市>广西壮族自治区钦州市>甘肃省定西市;粗纤维质量分数大小顺序为陕西省榆林市>广西壮族自治区钦州市>甘肃省定西市;脂肪质量分数大小顺序为甘肃省定西市>陕西省榆林市>广西壮族自治区钦州市;灰分质量分数大小顺序为甘肃省定西市>陕西省榆林市>广西壮族自治区钦州市。3种小茴香燃烧热、热重分析参数、脂肪、粗纤维、灰分、微量元素、氨基酸测定的综合评价多指标排序为0.183 2、1.831 9、-2.015 0。3种小茴香燃烧热,热重分析参数,脂肪、粗纤维、灰分、微量元素、氨基酸质量分数测定的综合评价多指标排序为广西壮族自治区钦州市>甘肃省定西市>陕西省榆林市。本研究建立了3种小茴香的多指标分析评价体系,为小茴香的研究提供科学的依据。In order to comprehensively evaluate the quality of fennel,three kinds of fennel with the origins of Dingxi City,Gansu Province,Qinzhou City,Guangxi Zhuang Autonomous Region,and Yulin City,Shaanxi Province were selected as the research objects,and the heat of combustion,stability of combustion,fat,crude fiber,ash,trace elements,and amino acids of the three kinds of fennel were determined.The experimental results showed that:the three kinds of fennel were ranked in the order of heat of combustion in Tingxi City,Gansu Province>Yulin City,Shaanxi Province>Qinzhou City,Guangxi Zhuang Autonomous Region;combustion stability was ranked in the order of Yulin City,Shaanxi Province>Qinzhou City,Guangxi Zhuang Autonomous Region>Tingxi City,Gansu Province;crude fiber content(%)was ranked in the order of Yulin City,Shaanxi Province>Qinzhou City,Guangxi Zhuang Autonomous Region>Tingxi City,Gansu Province;fat content(%)was ranked in the order of Tingxi City,Gansu Province;and fat content(%)was ranked in the order of Tingxi City,Gansu Province.The order of fat content(%)was Dingxi City,Gansu Province>Yulin City,Shaanxi Province>Qinzhou City,Guangxi Zhuang Autonomous Region;ash content was Dingxi City,Gansu Province>Yulin City,Shaanxi Province>Qinzhou City,Guangxi Zhuang Autonomous Region;and the order of comprehensive evaluation of heat of combustion,thermogravimetric analysis parameters,fat,crude fiber,ash,trace elements,and amino acids of the three kinds of fennel was 0.1832,1.8319,and-2.0150.The comprehensive evaluation of heat of combustion,thermogravimetric analysis parameters,fat,crude fiber,ash,trace elements,and amino acid determination of the three fennel species were ranked as Qinzhou City,Guangxi Zhuang Autonomous Region>Dingxi City,Gansu Province>Yulin City,Shaanxi Province.In this study,the multi-indicator analysis and evaluation system of three kinds of fennel was established to provide a scientific basis for the study of fennel.
