美国王鸽与欧洲肉鸽屠宰性能、肉品质、脂肪酸含量及抗氧化功能的比较分析

摘  要:为探究美国王鸽和欧洲肉鸽的乳鸽肉质特性,试验比较分析了美国王鸽和欧洲肉鸽28日龄乳鸽的屠宰性能、肉品质、胸肌脂肪酸含量、血清生化指标及抗氧化功能。屠宰性能测定结果显示:欧洲肉鸽的活重、屠体重、全净膛重、半净膛重、胸肌重、腿肌重、腹脂重、胸肌率均极显著高于美国王鸽(P<0.01),全净膛率和半净膛率显著高于美国王鸽(P<0.05),美国王鸽的屠宰率、腿肌率极显著高于欧洲肉鸽(P<0.01)。肉品质测定结果显示:美国王鸽的胸肌亮度值(L^(*))、滴水损失均显著高于欧洲肉鸽(P<0.05),pH值极显著高于欧洲肉鸽(P<0.01),胸肌剪切力极显著低于欧洲肉鸽(P<0.01)。脂肪酸测定结果显示:欧洲肉鸽胸肌中棕榈酸、油酸和反亚油酸含量显著高于美国王鸽(P<0.05),其余指标没有显著差异(P>0.05)。血清生化指标测定结果显示:美国王鸽血清中高密度脂蛋白(HDL)含量极显著高于欧洲肉鸽(P<0.01),低密度脂蛋白(LDL)含量和谷草转氨酶(AST)活性显著低于欧洲肉鸽(P<0.05)。抗氧化功能结果表明:美国王鸽的血清超氧化物歧化酶(SOD)活性、过氧化氢酶(CAT)活性、总抗氧能力(T-AOC)活性均极显著高于欧洲肉鸽(P<0.01),丙二醛(MDA)活性极显著低于欧洲肉鸽(P<0.01)。综上所述,美国王鸽和欧洲肉鸽产肉性能均良好;相对而言,欧洲肉鸽体型更大,胸肌发育更佳,系水力好;而美国王鸽腿肌较发达,胸肌嫩度高,脂肪沉积少,抗氧化功能更强。In order to explore the meat characteristics of American king pigeon and European pigeon,the slaughter perfor-mance,meat quality,breast fatty acid content,serum biochemical indexes and antioxidant function of 28-day-age squabs were compared and analyzed.The results of slaughter performance showed that the live weight,slaughter weight,eviscerated weight,half-eviscerated weight,breast muscle weight,leg muscle weight,abdominal fat weight and breast muscle percentage of European pigeons were highly significantly higher than those of American king pigeons(P<0.01);The eviscerated rate and half-eviscerated rate were significantly higher than those of American king pigeons(P<0.05),and the slaughter rate and leg muscle percentage of American king pigeons were highly significantly higher than those of European pigeons(P<0.01).The results of meat quality showed that the breast muscle brightness value(L^(*))and dripping loss of American king pigeons were significantly higher than those of European pigeons(P<0.05)and pH value was highly signifantly higher than that of European pigeons(P<0.01).But the breast muscle shear force was highly significantly lower than those of European pigeons(P<0.01).The results of fatty acid con-tents showed that the contents of palmitic acid,oleic acid and linolelaidic acid in breast muscle of European pigeon were signifi-cantly higher than those of American king pigeon(P<0.05),but there was no significant difference in other indexes(P>0.05).The results of serum biochemical indexes showed that the serum high density lipoprotein(HDL)content of American king pigeons was highly significantly higher than that of European pigeons(P<0.01),and the serum low density lipoprotein(LDL)content and asperate aminotranferase enzyme(AST)activity were significantly lower than those of European pigeons(P<0.05).The results of antioxidant function showed that the activities of super oxide dismutase(SOD),catalase(CAT)and total antioxidant capacity(T-AOC)in serum of American king pigeons were highly significantly high
