摘  要:个性化、美观化的健康饮食越来越受到欢迎,传统食品加工技术很难完全满足个性化需求。设计开发可自清洁的食品3D打印机,该设备可以用巧克力类、淀粉类、亲水胶体类等食材进行打印。3D打印机的自清洁机构能够及时清理食品加工过程中产生的各种碎屑、废料,食材存储与加热装置可以确保加工多种不同食材。此外,深入分析了巧克力类、淀粉类、亲水胶体类等食材的粘稠度、流动性、受热性等特性,相应设计了多种模块化打印喷头。本设计可以满足个性化精准营养的配餐供应,为个性化、定制化餐饮行业提供了新的路径,具有良好的市场前景和经济效益。Personalized and aesthetic healthy diets are gaining increasing popularity,yet traditional food processing technologies struggle to fully meet personalized demands.This paper presents a self-cleaning food 3D printer designed to print with ingredients such as chocolate,starch,and hydrocolloids.The self-cleaning mechanism of 3D printer can timely clean all kinds of chips and wastes generated in the food processing process,and the food storage and heating device can ensure the processing of a variety of different food materials.In addition,the viscosity,fluidity,heat resistance of chocolate,starch,hydrophilic colloid and other ingredients were analyzed,and a variety of modular printing heads are designed accordingly.This design can meet the demand for personalized and precise nutrition of food supply,offering a new pathway for the personalized and customized catering industry with promising market prospects and economic benefits.
