摘  要:核桃是一种重要的经济作物,其副产物如核桃青皮、核桃分心木和核桃粕通常被忽视或作为废弃物处理,但现代研究显示它们具有显著的健康益处和工业应用潜力。核桃青皮含有的胡桃醌等成分具有抗肿瘤和抗真菌特性,可用作天然农药和食品添加剂;核桃分心木富含黄酮和酚类,有利尿清热、抗氧化和抗肿瘤的作用;核桃粕中丰富的植物蛋白和氨基酸可通过加工制成具有抗氧化和降血压作用的多肽。在实现核桃副产物产业化的过程中尚存在技术上的挑战,未来可通过技术优化和产品创新提高其市场利用率,推动核桃产业的可持续发展,为健康和环保贡献力量。Walnut is an important economic crop,its by-products such as walnut green husk,walnut septum,and walnut meal usually are overlooked or treated as waste.However,modern research has revealed their significant health benefits and industrial application potential.Walnut green husks contain components like juglone,which exhibit antitumor and antifungal properties,making them suitable for use as natural pesticides and food additives.The walnut septum is rich in flavonoids and phenols,offering diuretic,antipyretic,antioxidant,and antitumor effects.Walnut meal,abundant in plant proteins and amino acids,can be processed into peptides with antioxidant and antihypertensive properties.In the industrializing process of walnut by-products,there are still technical challenges.In the future,technological optimization and product innovation are expected to enhance their market utilization,promote the sustainable development of the walnut industry,and contribute to health and environmental protection.
