摘  要:应用相关性分析、主成分分析的多元统计分析方法,对海南省5个咖啡庄园中种植的6个不同品种咖啡烘焙豆的风味化合物含量指标进行分析,探究风味化合物对咖啡风味形成的影响,对各品种咖啡豆进行风味特征丰富度的排序、按照香型属性进行分类。结果表明:(1)总体上,海南省咖啡烘焙豆总体风味品质较优秀,具有较少负面气味、显著酸感和较低苦味。不同豆种之间的风味饱满度和丰富度存在一定差异:挥发性风味化合物指标显示出较大差异,非挥发性风味化合物表现出较低差异。(2)基于气味和滋味特征评分建立综合评价显示,‘母山2号’‘兴隆’和‘陨石岭’咖啡3个品种咖啡豆的气味和滋味特征相似,‘母山1号’‘琼海’和‘福山’咖啡的特征相近;种植在热带、高海拔黎母山地区的‘母山1号’和‘母山2号’咖啡豆有较高的综合风味丰富饱满度。本研究为咖啡庄园经营者提供了咖啡品种选育和种植方向建议,同时为消费者提供了清晰、明确的精品咖啡豆选购指南,以期提升海南咖啡品质并扩大市场。In this study,multivariate statistical analysis methods of correlation analysis and principal component analysis were used to analyze the flavor compound content indexes of 6 different varieties of coffee baked beans planted in 5 coffee manors in Hainan Province,and the effects of flavor compounds on the formation of coffee flavor were explored.The richness of flavor characteristics of each variety of coffee beans was sorted and classified according to the aroma type attributes.The results showed that:①in general,the overall flavor quality of coffee baked beans in Hainan Province was excellent,with less negative odor,significant acidity and lower bitterness.There are some differences in flavor fullness and richness among different bean varieties.Volatile flavor compounds showed great differences,and non-volatile flavor compounds showed low differences;②the comprehensive evaluation based on the scores of odor and taste showed that the odor and taste of the three varieties of coffee beans of Mushan No.2,Xinglong and Yunshiling were similar,and the characteristics of Mushan No.1,Qionghai and Fushan coffee were similar.The Mushan No.1 and Mushan No.2 coffee beans planted in the tropical and high altitude Limushan area have higher comprehensive flavor richness;③this study provides suggestions for coffee variety breeding and planting direction for coffee manor operators,and provides consumers with a clear guide for the selection and purchase of fine coffee beans,in order to improve the quality of coffee in Hainan.
