摘 要:【目的】咖啡是世界三大饮料作物之一,产业规模巨大。本研究拟系统探讨国际咖啡产业领域的研究现状、热点及变化趋势。【方法】基于Web of Science核心合集数据库进行检索,通过文献计量法,对2005年1月至2024年7月咖啡产业领域相关文献进行数据分析与挖掘,并应用CiteSpace软件对结果进行可视化分析。【结果】2005—2024年国际咖啡领域的年度发文量呈稳步增长态势,其中,2005—2014年,咖啡产业领域发文数量从18篇增长至37篇,年均增长率为8.34%;2015—2023年,发文数量从65篇增长至222篇,年均增长率为16.60%;2024年1—7月发文量已达113篇。拉夫拉斯联邦大学、坎皮纳斯州立大学、圣保罗大学跻身为发文量排名前三的机构,形成了一批稳定的研究团队,为咖啡产业领域研究作出了贡献。研究热点呈现出3个阶段的变化,其中,2015年之前主要集中在咖啡种植品种优化、绿色生产及销售贸易等,2016—2019年主要集中在咖啡种植管理、咖啡初加工工艺优化、产品开发及风味物质研究等,2020年以来主要集中在咖啡生物活性物质研究、加工废弃物利用等。【结论】近20年来国际上对咖啡产业研究的年度发文量呈稳步增长态势,研究领域不断扩大,内容不断深化。当前的研究热点是通过咖啡精深加工工艺及产品研发、生物活性物质研究和咖啡渣等副产品、废弃物利用等来延长咖啡产业链,提升产业附加值,推动咖啡产业高质量发展。【Objective】Coffee is one of the world's three major beverage crops,supporting a substantial and expansive global industry.This study was conducted to comprehensively understand the evolutionary trends,current status,and key issues in the realm of coffee industry worldwide.【Method】Bibliometric review and data mining techniques were employed to find the literature related to the coffee industry published between January 2005 and July 2024 through the Web of Science core collection database.The obtained results were then visualized and analyzed using CiteSpace software.【Result】This study found that the annual number of publications in international coffee industry field has been steadily increasing.In detail,from 2005 to 2014,the number of publications in the coffee industry field increased from 18 to 37,reflecting an average annual growth rate of 8.34%;from 2015 to 2023,the number of publications surged from 65 to 222,with an average annual growth rate of 16.60%;especially,from January to July 2024,the number of publications already reached 113.The Federal University of Lavras,the University of Campinas,and the University of Sao Paulo ranked the top three institutions in terms of number of publications.These institutions have established several stable research teams,significantly contributing to the research field of coffee industry.Research hotspots have evolved through three distinct stages.Before 2015,the research primarily focused on optimizing coffee cultivars,green production practices,and trade.From 2016 to 2019,the emphasis shifted towards optimizing primary processing techniques,product development,and finding flavor compounds.Since 2020,more research has increasingly concentrated on exploring functional substances in coffee and utilizing the processing waste.[Conclusion] The annual number of publications in international coffee industry field has a tend of steadily increasing in recent 20 years with continuously enlarging research areas and deepening research contents.The present research hot
