摘  要:传统中餐烹饪技艺承载着中华民族数千年的饮食文化。随着人们对食品安全关注度的不断提高,传统中餐烹饪技艺面临着与现代食品安全标准相融合的挑战与机遇。本文分析传统中餐烹饪技艺与现代食品安全标准融合的必要性,总结传统中餐烹饪技艺与现代食品安全标准融合存在的问题,并提出更新烹饪理念、推进传统烹饪技艺标准化、完善食品安全执行标准等促进传统中餐烹饪技艺与现代食品安全标准融合路径,旨在保障消费者的饮食安全的同时传承和弘扬中华优秀饮食文化。Traditional Chinese cooking skills carry the food culture of the Chinese nation for thousands of years.With the increasing attention to food safety,traditional Chinese cooking skills are facing challenges and opportunities to integrate with modern food safety standards.This paper analyzes the necessity of the fusion of traditional Chinese cooking skills and modern food safety standards,summarizes the problems existing in the fusion of traditional Chinese cooking skills and modern food safety standards,and puts forward ways to promote the fusion of traditional Chinese cooking skills and modern food safety standards by updating cooking concepts,promoting the standardization of traditional cooking skills and improving food safety implementation standards.It aims to protect the food safety of consumers while inheriting and carrying forward the excellent Chinese food culture.
