摘 要:在2023年中央一号文件首次明确支持预制菜产业的背景下,预制菜市场展现出前所未有的发展活力。同时,“宅经济”与“懒人经济”的崛起加速了预制菜的市场渗透,使其成为万亿级赛道上的热门“选手”。为实现潮州预制菜产业的持续健康发展,本文提出打破消费者对预制菜的认知偏见与误解,精准定位目标消费人群,促进生产端与消费端的有效连接,并深度激活非遗美食的文化基因等策略。In 2023,the No.1 document of the central government clearly supports the prefabricated food industry for the first time,and the prefabricated food market shows unprecedented development vitality.At the same time,the rise of the“stay-at-home economy”and the“lazy economy”has accelerated the market penetration of prefabricated dishes,making them popular“players”on the trillion-level track.In order to achieve the sustainable and healthy development of the prefabricated food industry in Chaozhou,this paper proposes strategies such as breaking consumers’cognitive biases and misunderstandings about prefabricated dishes,accurately locating the target consumer groups,promoting the effective connection between the production end and the consumer side,and deeply activating the cultural genes of intangible cultural heritage cuisine.
