信息-实体交融背景下城市实体餐饮空间人气的影响机制探析——以天津市中心城区为例

摘  要:随着移动互联网和信息技术在餐饮行业广泛应用,餐饮空间格局受到深远影响。根据中心地理论,餐饮设施的地理区位优势是影响消费者消费选择的重要因素,而网络点评平台提供的餐饮商户信息和消费者点评使得餐饮商户能够突破真实地理空间的限制,影响真实城市空间区位的重要性,实体-信息空间相互交融。尽管已有学者关注到虚拟信息空间与实体地理空间的链接机制,但对餐饮商户的区位优势和网络平台影响的比较与深入探讨尚不充分。本研究以道路可达性和网络口碑为切口,对不同类型餐厅的受欢迎程度的影响机制进行比较与分析,旨在探讨信息技术对城市实体空间和餐饮业的影响。研究采集了2022年大众点评天津市六区的餐饮商户数据,并建立了餐厅受欢迎度和网络口碑评价指标,而后利用城市网络分析(UNA)计算了城市道路中心性,并综合运用多元线性回归、地理探测器以及多尺度地理加权回归等方法对两者的作用机制进行了探讨。研究发现,网络口碑对餐厅受欢迎度的影响在城市尺度更为显著,尤其对休闲餐饮影响最大。中餐受欢迎度更依赖于道路可达性,特别是在小尺度范围内,而异国料理则更受大尺度范围上的道路可达性影响。研究为城市规划者和餐饮业经营者提供了新的见解,深化了信息技术与实体空间交融的认知。The widespread use of mobile internet and information technology has transformed dining establishments in the catering industry.Geographical advantages,influenced by central place theory,play a pivotal role in consumer choices.Online review platforms enable restaurants to transcend geographical constraints,reshaping the importance of real urban spatial locations.Despite existing research on virtual-physical space linkages,there's limited comparative exploration of dining establishments'locational advantages and the impact of online platforms.This study,focusing on road accessibility and online reputation,analyzes mechanisms influencing the popularity of different restaurant types.It explores the influence of modern information technology on urban spaces and the catering industry.Data from Tianjin's six districts in 2022 via the Dianping platform were used.Metrics for restaurant popularity and online reputation were established,and Urban Network Analysis(UNA)calculated road accessibility.Employing multiple linear regression,geographic detectors,and multiscale geographic weighted regression,the study investigates their effects.Findings emphasize that online reputation significantly influences restaurant popularity at the urban scale,especially for casual dining.Chinese cuisine popularity relies more on road accessibility at smaller scales,while exotic cuisine popularity is more influenced by road accessibility at larger scales.This study provides valuable insights for urban planners and catering industry operators,deepening understanding of information technology's integration with physical spaces.
