摘 要:D-核糖是生物体内重要的五碳单糖,广泛存在于各种生物体组织中,D-核糖作为核糖核酸及核苷酸类辅酶的组成成分,D-核糖是生物体细胞中产生能量的重要物质,可以改善细胞代谢,促进三磷酸腺苷的合成,保护心脏缺血受损,使心脏细胞维持正常功能,同时也可以提升肌肉细胞的能量供给,提高运动能力。目前D-核糖的安全性和功能特性已经得到了大量证据支持,国外已经广泛应用于膳食补充剂。本文对D-核糖安全性评价和法规现状、功能特性和在食品领域的应用情况进行了详细阐述,以期为D-核糖的功能研究及产品开发提供参考。D-ribose is one of the most important five-carbon monosaccharides in living organisms.D-ribose is widely found in various tissues of living organisms.D-ribose is a component of RNA and nucleotide coenzymes,D-ribose is an important energy-producing substance in biological cells.It can improve cellular metabolism,promote the synthesis of Adenosine triphosphate,protect the heart from damage caused by ischemia,and enable heart cells to maintain normal functions.At the same time,it can also enhance the energy supply of muscle cells,and improve exercise capacity.At present,the safety and functional properties of D-ribose have been supported by a lot of evidence,and it has been widely used in dietary supplement abroad.In this paper,D-ribose safety evaluation and regulatory status,functional characteristics and application in the field of food were described in detail,in order to provide reference for D-ribose functional research and product development.
