摘 要:近年来,电子烟在欧美市场发展迅速,各类“甜味”电子烟是流行的主要产品类型。气溶胶发苦严重影响消费者的抽吸体验,成为电子烟行业的“痛点”问题。电子烟气溶胶的感官特性受到多方面的影响,电子烟烟液成分是“发苦”的关键因素之一,对苦味的感知机理进行综述,对电子烟烟液常见的苦味成分进行分类,主要包括生物碱、羰基化合物、高级醇、甜味剂等,并简要介绍苦味成分的检测方法及除苦遮蔽方法,为提升产品感官抽吸体验提供参考。In recent years,electronic cigarettes have developed rapidly in the European and American markets,and various sweet electronic cigarettes are the main popular product types.The bitterness of aerosols seriously affects consumers’sensory properties and has become a pain point in the electronic cigarette industry.The sensory properties of e-cigarette aerosol are influenced by multiple factors,and e-liquid is one of the key factors for bitterness.The perception mechanism of bitterness were reviewed in this paper,the common bitterness formula components of e-liquid were classified,mainly including alkaloids,carbonyl compounds,higher alcohols,sweeteners,etc.The detection and removal methods of bitterness components were briefly introduced,so as to provide a reference for improving the sensory experience of products.
