摘  要:针对烟梗浓缩液香气量低、杂气重等感官缺陷,选择谷氨酸对烟梗浓缩液进行美拉德反应,通过正交试验确定烟梗浓缩液与谷氨酸的美拉德反应最佳条件为反应温度90℃、反应时间1 h、烟梗浓缩液与谷氨酸质量比为10∶1,此时再造烟叶的品质最优。对最佳条件下的美拉德反应产物进行气相色谱-质谱(GC-MS)分析发现,相对反应前,致香成分增加12种,质量比含量提高9.57%。In order to address the sensory defects in tobacco stem concentrate,such as low aroma intensity and strong offflavors,glutamic acid was selected to carry out the Maillard reaction on the tobacco stem concentrate.Through orthogonal experiments,the optimal conditions for the Maillard reaction were determined to be the reaction temperature of 90℃,the reaction time of 1 h,and the mass ratio of tobacco stem concentrate to glutamic acid of 10∶1,which resulted in the best quality of the reconstituted tobacco.By gas chromatography-mass spectrometry(GC-MS)analyses of the Maillard reaction products under the optimal conditions,12 aroma-causing components were increased and the mass ratio content increased by 9.57%compared to those before the reaction.
