摘 要:为保持鲜切苹果贮藏品质,延缓其组织褐变、腐烂变质等现象的发生,以鲜切‘红富士’苹果为试材,研究苯丙氨酸/海藻酸钠纳米复合涂膜对鲜切苹果贮藏品质、苯丙烷代谢以及硫化氢合成途径的影响。结果表明:苯丙氨酸/海藻酸钠纳米复合涂膜处理可以维持鲜切苹果的色泽,抑制褐变,维持其硬度及可溶性固形物含量;并可提高鲜切苹果中超氧化物歧化酶、过氧化氢酶和抗坏血酸过氧化物酶的活性,使超氧阴离子自由基和过氧化氢含量保持较低水平,减小鲜切苹果的氧化应激反应;同时增强苯丙烷代谢途径相关酶的活性,使鲜切苹果中总酚、类黄酮、木质素等抗氧化物得到累积,并增强内源H_(2)S代谢途径的各类酶活性,使内源H_(2)S含量维持在一定水平,延缓鲜切苹果的衰老,维持果实品质。综合分析,苯丙氨酸/海藻酸钠纳米复合涂膜处理对鲜切苹果具有较好的保鲜效果。研究结果可为鲜切苹果行业发展提供技术指导和理论参考。In order to maintain the storage quality and delay the occurrence of tissue browning,decay and spoilage of fresh-cut apples,the effect of phenylalanine/sodium alginate nanocomposite film on the storage quality,phenylpropane metabolism,and hydrogen sulfide synthesis pathway of fresh-cut‘Red Fuji’apples was studied.The results showed that the phenylalanine sodium alginate nanocomposite coating treatment could maintain the color of fresh-cut apples,inhibit browning,maintain the hardness and soluble solid content,increase the activities of superoxide dismutase,catalase,and ascorbic acid peroxidase in fresh-cut apples to keep the content of superoxide anions and hydrogen peroxide at a low level,and reduce the oxidative stress response in fresh-cut apples.At the same time,enhance the activity of enzymes related to the phenylpropanoid metabolism pathway to accumulate total phenols,flavonoids,lignin,and other antioxidants in fresh-cut apples,and enhance the activities of various enzymes in the endogenous hydrogen sulfide(H_(2)S)metabolism pathway to.maintain the endogenous H_(2)S content at a certain level,so that delay the aging of freshcut apples and keep the fruit quality.Overall,phenylalanine/sodium alginate nanocomposite coating treatment had a good preservation effect on fresh-cut apples.The research results can provide technical guidance and theoretical references for further development of the fresh-cut apple industry.
