摘 要:为了研究浓缩液黏度这一物理参数的内在变化机理,本研究利用多种表征手段对浓缩液的黏流特性、各化学组分和物理指标进行了测定。黏流特性分析结果显示,浓缩液属于剪切稀化流体,剪切速率、温度、剪切时间均对浓缩液黏度有影响。Pearson相关性分析发现,浓缩黏度与蛋白质、淀粉、果胶、含渣量、pH值之间存在显著正相关。此外,浓缩液黏度与粒径分布、粒型具有较大联系,微粒粒径尺寸越大,不规则型态粒子占比越多,浓缩液黏度越大。总之,本研究充分讨论了浓缩液的黏流特性,找出了与黏度变化具有较强相关性的主要化学组分和物理指标,解释了黏度与粒径分布、粒型的关系。本研究为降黏提供了很好的思路,对浓缩液的精准调控具有重要指导意义。In order to study the internal change mechanism of viscosity of concentrated liquid,the viscous flow characteristics,chemical components and physical indexes of concentrated liquid were measured by various characterization methods.The results of viscous flow characteristic analysis show that the concentrated liquid belongs to shear thinning fluid,and the viscosity of the concentrated liquid is affected by shear rate,temperature and shear time.Pearson correlation analysis showed that there were significant positive correlations between concentrated viscosity and protein,starch,pectin,slag content and pH.In addition,the viscosity of concentrated liquid has a great relationship with particle size distribution and particle pattern.The larger the particle size and the larger the proportion of irregular particles,the greater the viscosity of concentrated liquid.Overall,this study fully discussed the viscous flow characteristics of the concentrated solution,found out the main chemical components and physical indexes with strong correlation with viscosity changes,and explained the relationship between viscosity and particle size distribution and particle pattern.This study provides a good idea for viscosity reduction and has important guiding significance for the precise regulation of concentrates.
