摘  要:不饱和脂肪酸(UFAs)在改善动物生产性能和繁殖性能、调节免疫机能及糖和脂代谢、提高畜产品品质等方面具有重要作用,但是,UFAs极易受外界环境因素如温度、光照、pH等的影响而发生劣变。微胶囊技术作为一种先进的活性成分保存方法,能有效防止UFAs在储存、加工和饲喂过程中发生氧化变质。本文概述了UFAs的生理功能及其在畜禽生产领域的应用,系统梳理了微胶囊的制备方法、常用壁材及其在包埋UFAs中的研究进展,并对UFAs微胶囊技术在畜禽生产中的研究及应用前景进行展望,以期为后续研究提供参考依据。Unsaturated fatty acids(UFAs)play an important role in improving animal production performance and reproductive performance,regulating immune function,glucose and lipid metabolism,and improving the quality of animal products.However,UFAs are easily affected by external environmental factors,such as temperature,light,pH and so on.As an advanced active ingredient preservation method,microcapsule technology can effectively prevent UFAs from oxidative deterioration during storage,processing and feeding.In this paper,the physiological functions of UFAs and its application in the field of livestock and poultry production were summarized,the preparation methods of microcapsules,common wall materials and their research progress in embedding UFAs were systematically reviewed,and the application prospect and research of UFAs microcapsule technology in livestock and poultry production were prospected,in order to provide reference for subsequent research.
