摘  要:本试验旨在探究茶多糖对热应激西门塔尔肉牛血清抗氧化、免疫、生化指标及代谢产物的影响。在夏季三伏天气候下,选取24头15月龄育肥期西门塔尔肉牛,随机分为4个组,每组6个重复,每个重复1头牛。对照组(CON组)饲喂基础饲粮,试验组分别在基础饲粮中额外添加0.4%(T1组)、0.8%(T2组)和1.2%(T3组)的茶多糖(干物质基础)。预试期2周,正试期6周。结果表明:1)与CON组相比,T1、T2和T3组的血清丙二醛含量均显著降低(P<0.05),T2组的血清总抗氧化能力显著升高(P<0.05)。2)与CON组相比,T1、T2和T3组的血清肿瘤坏死因子-α、白细胞介素-1β、免疫球蛋白A和免疫球蛋白M含量显著升高(P<0.05),T3组的血清白细胞介素-2含量显著升高(P<0.05)。3)与CON组相比,T2组的血清肌酐含量显著升高(P<0.05),T2和T3组的血清热休克蛋白-72含量显著升高(P<0.05),T3组的血清三碘甲状腺原氨酸含量显著降低(P<0.05)。4)代谢组学分析显示,负离子模式下,与CON组相比,T1组的血清16-羟基十六烷酸、硬脂酸、花生四烯酸、8Z、11Z、14Z二十碳三烯酸、反油酸、肾上腺酸和溶血磷脂酰乙醇胺(18∶0)含量均显著升高(P<0.05),十二烷二酸和壬二酸含量显著降低(P<0.05);T2组的血清16-羟基十六烷酸含量显著升高(P<0.05)。正离子模式下,与CON组相比,T1组的血清DL-二棕榈酰磷脂酰胆碱、氢化白果酸(18∶0)、16(R)-羟化二十烷四烯酸和乙酰-L-肉碱含量均显著升高(P<0.05),磷脂酰胆碱(19∶1/19∶2)含量显著降低(P<0.05);T2组的血清磷脂酰胆碱(20∶3/20∶3)、氢化白果酸(18∶0)和L-羟基脯氨酸含量均显著升高(P<0.05);T3组的血清磷脂酰胆(19∶1/19∶1)、磷脂酰胆碱(20∶4e/18∶2)和磷脂酰胆碱(18∶3e/19∶2)含量均显著降低(P<0.05)。5)正、负离子模式下代谢物模块汇总和富集分析(MSEA)显著通路富集分析结果显示,亚麻酸和亚油酸代谢、花生四烯酸代谢为有显著差异�This experiment was carried out to explore the effects of tea polysaccharides on serum antioxidant,immune and biochemical indices and metabolites of Simmental beef cattle under heat stress.Under the summer dog days weather conditions,twenty-four 15-month-old Simmental beef cattle during the fattening stage were randomly divided into 4 groups with 6 replicates per group and 1 cattle per replicate.The control group(CON group)was fed a basal diet,and the experimental groups were fed the basal diet additional supplemented with 0.4%(T1 group),0.8%(T2 group)and 1.2%(T3 group)tea polysaccharides(dry matter basis),respectively.The pre-experimental period lasted for 2 weeks,and the experimental period lasted for 6 weeks.The results showed as follows:1)compared with the CON group,the serum malondialdehyde content of T1,T2 and T3 groups was significantly decreased(P<0.05),and the serum total antioxidant capacity of T2 group was significantly increased(P<0.05).2)Compared with the CON group,the contents of tumor necrosis factor-α,interleukin-1β,immunoglobulin A and immunoglobulin M in serum of T1,T2 and T3 groups were significantly increased(P<0.05),and the serum interleukin-2 content of T3 group was significantly increased(P<0.05).3)Compared with the CON group,the serum creatinine content of T2 group was significantly increased(P<0.05),the serum heat shock protein-72 content of T2 and T3 groups was significantly increased(P<0.05),and the serum triiodothyronine content of T3 group was significantly decreased(P<0.05).4)Metabolomics analysis showed that in the negative ion mode,compared with the CON group,the contents of 16-hydroxycetanoic acid,stearic acid,arachidonic acid,8Z,11Z,14Z eicosatrienoic acid,oleic acid,adrenal acid and lysophosphatidylethanolamine in serum of T1 group were significantly increased(P<0.05),and the contents of dodecanoic acid and azelaic acid were significantly decreased(P<0.05);the serum 16-hydroxycetanoic acid content of T2 group was significantly increased(P<0.05).In the positive ion mode,compare
