摘 要:为了保障竹叶青酒安全生产和质量可控,提升竹叶青酒产品品质。采用电感耦合等离子体-质谱法(ICP-MS)测定竹叶青酒中15种无机元素含量并对其测定方法进行方法学考察;对含量测定结果进行聚类分析、主成分分析及偏最小二乘判别分析。结果表明,含量测定方法线性、精密度、重复性和稳定性考察结果均良好,平均加样回收率为92.2%~118.0%,适用于竹叶青酒无机元素的含量测定。聚类分析、主成分分析和偏最小二乘判别可以将3种竹叶青酒进行有效区分。偏最小二乘判别结合重要性因子建立验证模型分析结果表明,3种竹叶青酒具有显著性差异的无机元素是Na、P、K、Al。研究利用ICP-MS技术结合化学计量法建立的无机元素间含量差异的模式识别分析,可为竹叶青酒质量控制和安全阐释提供科学依据。In order to ensure the safe production and controllable quality of Zhuyeqing liquor,and to improve the product quality of Zhuyeqing liquor.Inductively coupled plasma mass spectrometry(ICP-MS)was used to determine the contents of 15inorganic elements in Zhuyeqing liquor,the results were then subjected to cluster analysis,principal component analysis and partial least squares discriminant analysis.The results showed that the method was suitable for the determination of inorganic elements in Zhuyeqing liquor with good linearity,precision,reproducibility and stability,and average spiked recoveries of 92.2%-118.0%.Cluster analysis,principal component analysis and partial least squares discrimination could effectively distinguish the three Zhuyeqing liquors.The results of the validation model analysis by partial least squares discriminant combined with importance factors indicated that the inorganic elements with significant differences among the three Zhuyeqing liquors were Na,P,K and Al.The study of pattern recognition analysis of the content differences between inorganic elements established by ICP-MS technology combined with chemometrics can provide a scientific basis for the quality control and safety interpretation of Zhuyeqing liquor.
