摘  要:随着食品安全问题日益受到关注,食品添加剂的检测成为确保食品质量和公共健康的重要手段。分子印迹技术(MIT)作为新兴的检测方法,在食品添加剂的检测中展示了巨大的潜力。本文概述了分子印迹技术的特点及其基本原理,分析了其在食品添加剂检测中的现状,并探讨了在防腐剂、着色剂、甜味剂和抗氧化剂等常见食品添加剂检测中的应用。通过对分子印迹技术的优势、应用案例的分析,表明该技术具备高选择性、快速响应、低成本和现场检测的优势,为食品添加剂的监测提供了新的思路。With the increasing concern of food safety,the detection of food additives has become an important means to ensure food quality and public health.As a new detection method,molecular imprinting(MIT)has shown great potential in the detection of food additives.In this paper,the characteristics and basic principles of molecular imprinting technology are summarized,and its current status in the detection of food additives is analyzed,and its application in the detection of common food additives such as preservatives,colorants,sweeteners and antioxidants is discussed.Through the analysis of the advantages and application cases of molecular imprinting technology,it is shown that the technology has the advantages of high selectivity,fast response,low cost and field detection,which provides a new idea for the monitoring of food additives.
