摘　　要：综述了产脂微生物的种类、代谢特点 ,分析了碳源、氮源、温度、p H、培养时间等培养条件对菌油中脂肪酸种类、含量的影响。讨论了不饱和脂肪酸的产生机制。Recent studies on species and fermentation conditions of lipid-producing microorganisms are reviewed in this article. In addition, lipid composition and the mechanism of synthesizing unsaturated fatty acids in the lipid are discussed, meanwhile the trend in this research field is proposed.
