摘 要:目的 了解上海静安区饮食服务行业从业人员卫生法律法规及卫生知识常识掌握情况 ,找出不同文化层次人员之间的差距 ,为今后健康教育提供科学依据。方法 按年体检总人数 1 0 %的比例进行随机抽样调查。结果 从业人员卫生法律法规及卫生知识常识掌握的得分为 :98 2 2± 1 3 5 1和 69 61± 1 5 65。结论 不同文化层次的从业人员有差异 ,尤其卫生知识掌握程度差距明显 ,加强行业从业人员卫生知识培训 。Objective To investigate the knowledge rates of laws and regulations on food hygiene among the employees of catering trade in Jing'an District Shanghai Province. Methods A questionnaire survey was conducted among 2440 employees of catering trade in Jing'an District Shanghai Province, selected from those attending yearly preventive physical examination by random sampling in proportion as 1∶10, with a ratio of 1∶0.76 between the native of Shanghai and nonnatives. Results The general score of laws and regulations on food hygiene was 89.22±13.51. The general score of food hygiene was 69.61±15.65. In general the educational level of the natives of Shanghai was higher than that of the nonnatives. The higher the educational level, the higher the score. The questions with relatively low scores included those about the transmission routes of hepatitis B, pulmonary tuberculosis, and typhoid fever. Conclusion In general, the employees know rather well the knowledge about laws and regulations on food hygiene and about food hygiene, especially the former. However, education on transmission routes of hepatitis B, pulmonary tuberculosis, and typhoid fever should be strengthened.
