摘  要:从香肠中分离得到一株产细菌素的乳酸片球菌 ,其发酵液经硫酸铵沉淀 ,CM SephadexC5 0阳离子交换柱层析后 ,得到的细菌素样品通过SDS PAGE证明是一条带 ,分子量约 2 0 83ku ,该细菌素对热及酸碱稳定 ,易被酶降解而失去活性 ,对许多革兰氏阳性菌有较强的抑制作用 ,而对革兰氏阴性菌、酵母和霉没有作用。One strain of bacteriocin producing bacterium was isolated from sausage and identified as Pediococcus acidilactici . Bacteriocin was obtained from the fermentation broth of Pedicoccus acidiloctici culture by ammonium sulfate precipitation and ion exchange chromatography on CM Sephadex C50. The molecular weight of the bacteriocin was determined by SDS PAGE to be about 20 83ku. The Bacteriocin was heat stable, active at any different pH, and sensitive to several proteases including trypsin, protease K, papain, α chymo trypsin. The bacteriocin was active against a broad range of Gram positive bacteria but had no activity against the Gram negative bacteria, yeasts and molds.
