摘  要:主要研究了不饱和天然油脂及衍生物脂肪酸、脂肪酸单脂的深度氧化及某些物性变化 ,着重考查了在深度氧化过程中氧化油脂及衍生物的氢过氧化值PV的变化。试验证明 :除碘值外 ,脂肪链结构对油脂的深度氧化影响是多方面的 ;The deeply oxidation and changeable properties about the unsaturated natural lipoids, their fatty acids and (mono-)esters of fatty acids were studied. It is very important that the change of PV(peroxide value) of lipoids is researched about the oxidized lipoids and their derivants in the processing of deeply oxidation. It is shown that,besides IV(iodine value),the change of PV is related to structures of fatty chain, and on the basis of great deal of experimental result and data of instrumental analysis, many new points that are different from the traditional ones were put forward.
