摘　　要：研究了几种常见金属离子对板栗壳棕色素性质的影响 ,结果表明Na+、K+、Mg2 +、Ba2 +、Ca2 +、Zn2 +对色素水溶液颜色的影响较小 ,Al3 +可与色素反应生成可溶性的黄色物质 ,Fe3 +、Pb2 +、Cu2 +会与色素反应生成沉淀 。The effects of metal ions on the stability of the pigment from chestnut shell were studied.Na +?K +?Mg 2+?Ba 2+?Ca 2+?Zn 2+had little influence on the color of the pigment aqueous solution.There was a reaction between Al 3+and the pigment,and a yellow substance could be resulted.Fe 3+?Pb 2+?Cu 2+could discolor the pigment in water,and precipitates were formed at the same time.
