摘 要:为解决定量分析羊奶中掺杂牛奶的含量这一难题,提出一种非线性化学指纹图谱信息回归测定法。先测定具有不同掺杂量奶品标样的非线性化学指纹图谱,并确定其诱导时间与掺杂牛奶含量之线性校正模型,然后用此校正模型和奶品试样指纹图谱诱导时间测定值计算奶品中掺杂牛奶的含量,最后根据牛奶含量来鉴别奶品是纯羊奶、牛奶、还是掺杂了牛奶的奶品,以及定量评价掺杂量。将此方法用于5种二元奶品验证样中牛奶和羊奶含量分析的结果表明,测定的RSD≤2.1%,回收率在97.3%~102%。非线性化学指纹图谱信息回归法重现性好、准确度高,是一种切实可行的快速测定二元奶品中羊奶和牛奶的含量,以及准确鉴别羊奶、牛奶和定量评价其质量的方法,也可作为其他复杂样品群集成分定量分析方法研究借鉴的手段。In order to determine the contents cow’s milk in goat milk,a rapid detection was established. At first,the non-linear chemical fingerprints of the standard samples with different cow’s milk contents were determined,and a correction model was fitted for the linear relationship between the inductive time of fingerprint and the cow’s milk content. And then,the cow’s milk contents in the samples were calculated by using the correction model and the induction time. Last,according to the cow’s milk content,the authenticity and quality of goat milk was accurately identified and quantitatively evaluated. The results of 5 verification samples by the method showed that the relative standard deviations was ≤2. 1%,and the recovery rates are 97. 3 ~ 102%. The method had good reproducibility and accuracy. It is a practical,accurate and rapid detection of adulteration of goat’s milk and quantitative evaluating the quality of the dairy. In addition,the method can also be a reference on determine other mixed system.
