大雁卵与鹅卵蛋白质脂肪磷脂含量比较研究

摘　　要：对大雁卵和鹅卵卵黄、卵清中蛋白质、脂肪、磷脂含量进行检测分析。结果表明:大雁卵卵清中的蛋白质含量明显高于鹅卵,卵黄中的脂肪含量则明显低于鹅卵,两者全卵中的蛋白质、脂肪含量无显著差异;大雁卵中磷脂含量明显低于鹅卵。In the experiment the protein,fat and phosphatide content in the yolk and albumin of anser eggs and goose eggs were measured to analyse.The result showed the content of protein in anser's albumin was higher than the goose's significantly,its content of fat in the yolk was signifcantly lower than the goose's.The protein and fat content of the whole eggs of anser and goose had remarkable difference.The content of phosphatide in anser eggs was higher than goose's significantly.
