紫黑糯米特种营养研究

摘　　要：紫黑糯稻是我国珍稀的稻种资源,其米粒及米饭呈紫红色,口味独特而受人们青睐。本研究表明,紫黑糯稻糙米的蛋白质、纤维素、维生素B_2等含量显著高于普通稻糙米,且由于习惯以半糙米食用,其蛋白质、纤维素、维生素、矿物元素等含量更显著或成倍高于普通稻精米,具有很高的营养价值。The purple black glutinous rice is one of the valuable rice variety resources in our country. It finds favour in many people's eyes because of its bright purple red colour and delicious flavour. It is confirmed in our test that the special nutrient, such as protein, fibre, VB_2, mineral elements (Ca, P, Fe……) etc., of the purple black glutinous rice is much higher than those of the ordinary rice or even double and redouble owing to its germplasm characteristics and processing methods ( it is usually processed as half-polished rice) which is obviously beneficial for human health.
